About This Coffee

This coffee is produced by Heber Ávila at Finca Las Moras in the Guajiquiro region of La Paz, Honduras, at an altitude of 1,600 to 1,800 meters. It is a Sidra variety processed using the washed method, where cherries are de-pulped and fermented for 10 to 12 hours before drying on raised beds. The flavor profile features notes of hibiscus, raspberry, and stewed fruit. This coffee is roasted for filter brewing methods.

A husband and wife team founded Subtext in 2016 in Toronto's Little Portugal, building a roastery around the idea that every coffee carries a deeper story worth uncovering. They roast on a Loring in small batches, producing light to medium profiles from Ethiopia, Colombia, Guatemala, Kenya, Rwanda, and Burundi, with each release accompanied by detailed story cards about the producers behind it.
