This coffee is produced by Gerardo Moreno, a third-generation coffee producer from Santa Barbara, Honduras, and son of coffee patriarch Daniel Moreno. The coffee features the Parainema variety, a hybrid created in the 1980s by IHCAFE (Honduras' national coffee research center) that offers resistance to leaf rust and nematodes while maintaining good cup quality. It is processed using the natural method. The drying process is particularly challenging due to the proximity to jungle areas and rain, but when precisely controlled, these conditions contribute to unique flavor attributes not found elsewhere in Central America.
