This coffee is a Pink Bourbon variety produced by Henry Bonilla at El Arrayán farm in Colombia at 1700 meters altitude. It undergoes an advanced washed co-fermentation process involving hibiscus infusion and controlled yeast fermentation in bioreactors, followed by a thermal shock rinse. The flavor profile is characterized by notes of strawberry shortcake, pomegranate, and meringue. This coffee is roasted to a very light level and is suitable for both modern espresso and filter brewing methods.
