Guatemala T'xayalaj is a washed coffee from the T'xayalaj farm (Aldea San Marcos) in Jacaltenango, Huehuetenango, grown at 1660–1725 masl by producer Maria Perez Morales. Varieties include Caturra, Catuai and Typica. The roast is optimized for espresso yet also performs well as a filter, producing a creamy, very sweet cup with milk-chocolate body and bright strawberry, raspberry and yogurt-like acidity alongside nougat sweetness.
Drip Roasters is a Bern-based specialty coffee roastery run by brothers Dennys and Fabian. They'd been roasting for two years before opening their café on Eigerplatz in 2020. All their coffees are single origins. The lineup is balanced, from beans that are roasted a shade darker for broader appeal, to special lots that sit on the lighter end. The selection shifts depending on the season, and especially after origin visits, but is always fully traceable.
