This coffee is a blend of cherry from throughout the Antigua valley in Guatemala, centrally processed at a historic wet mill owned by CAMEC and managed by Los Volcanes Coffee. Cherry is delivered daily from across the Antigua valley from dozens of select farms and smallholder communities. The washed process involves inspection, depulping, and fermentation for up to 72 hours in covered, temperature-controlled ceramic tanks. After fermentation, parchment is cleaned and density graded through a pressurized water siphon, then dried on large patios or in mechanical dryers. The region is characterized by volcanic soil composition from three stratovolcanoes including Volcán de Agua, with farms ranging from legacy estates to smallholder communities at various elevations.
