This coffee is from the Rosma Farm in San Pedro Necta, Huehuetenango, Guatemala, cultivated at 1500-1900 meters altitude by Fredy Morales and his family. The Rosmarago lot consists of Pacamara (75%) and Maragogype (15%) varieties grown in a special plot within the farm. The coffee is fully washed, with cherries picked at sunrise and meticulously processed through density sorting, gentle depulping, pH-monitored fermentation (12-36 hours), and slow drying on African beds for 12 days. Flavor notes include apricot, baked apple, mandarin orange, amaretto, and raw caramel. Medium roast level.
