This single-origin coffee comes from El Chalum in Huehuetenango, Guatemala, produced by Rocelio Antonio Martinez on Cerro Verde and Lote de la Finca. It is a washed process where cherries are depulped same day, fermented in open tanks, then washed and sun-dried with patio and bag rest. Expect a clean, balanced cup with medium body and bright acidity.
