This Colombian coffee is from Finca Zarza, produced by Jhonatan and Alejandra Gasca at 1925 meters altitude. The coffee is Pacamara variety processed using the Tropical Fruit Forward Natural method with Thermal Shock processing, where coffee is anaerobically fermented and washed with hot and cold water to open the pores of the coffee. Jhonatan is from a fourth-generation coffee-growing family who experimented with new varieties, with this Pacamara beginning production in 2022 after 5 years of growth. The processing results in intense fruit flavors with tasting notes of black cherry, malted chocolate, and raspberry.
