This coffee is produced at Finca La Maria, a family-run farm with a history dating back to 1945. Grown at an altitude of 1600 meters, this selection features Red Castillo and Yellow Castillo varieties. It undergoes an anaerobic natural processing method, resulting in an intensely fruity flavor profile reminiscent of a fruit-based cocktail. Tasting notes include strawberry, raisin, and rum. This light roast is characterized by its vibrant and complex flavor profile.
Aero Coffee Roasters was opened in June 2020 by Peter Femino in Northborough, Massachusetts, building on over 20 years of coffee industry experience that included founding Boston Common Coffee Co. in 2004. The 3,400 square foot space combines a production roastery, retail café, and bakery, with all coffee roasted on a Loring S70 that delivers up to 80 percent fuel savings compared to conventional machines. Head Roaster Michel Brode, a silver medallist at the 2016 Swedish National Coffee Roasting Championship, develops personalised profiles for wholesale clients. The roastery works directly with producers worldwide, prioritising transparency and fair pricing, and serves house baked pastries alongside its coffee programme.
