This Ethiopia Mundayo Natural Filter is a single-origin coffee produced by approximately 750 smallholder farmers in Mundayo kebele, Nensebo woreda, near the edge of the Harenna Forest. The cherry is delivered daily to Aash washing station, where it is processed as a natural lot. Cherries are hand-sorted, floated, and dried on raised beds for 15 to 18 days with careful turning, covering during peak sun, and overnight protection to preserve moisture and prevent thermal stress. The result is a natural-processed lot dried to stability before hulled and rested in parchment.
