This Ethiopia Idido Anaerobic Natural is a complex and powerful coffee from the Yirgacheffe region. Grown at altitudes between 1850 and 2200 meters, the cherries undergo a 90-hour anaerobic fermentation process before being shade-dried on raised screens. This unique processing results in a heavy, syrupy mouthfeel and a vibrant flavor profile featuring notes of lavender, lemon zest, jasmine, ginger, green tea, berries, and citrus. It is well-suited for pour-over brewing and cold brew.
Founded in 2002 by R. Miguel Meza in Minnesota, Paradise Coffee Roasters relocated to Hilo, Hawaii in 2008 to work directly with local farmers and root the business in origin. The roastery operates a Diedrich IR12, utilizing equipment known for precision and control in capturing the nuanced flavors of specialty coffee.
