About This Coffee

This Ethiopia Guji G1 is a natural-processed Heirloom variety from 2300 meters altitude. The coffee undergoes an experimental "Noble Winey" processing method inspired by German noble rot wines, involving 50-60 days of drying under shade with only 2-3 hours of daily sunlight, causing the cherries to develop distinctive color changes and a whitish fungus layer. The result is a complex, clean coffee with tasting notes of peach, berries, Muscat grapes, Kyoho grapes, and oolong tea.
