An Ethiopian coffee from Elto Coffee, produced by Eliyas Dukamo and Atiklit Dejene at Sidama Bensa. Crafted as a semi-washed (honey) process, the cherries are depulped and dried with part of the mucilage, yielding a cup that balances the clarity of a washed coffee with the sweetness of a natural. Varieties include 74110 and 74112. Roasted as an omni roast with a score of 87. In the cup: a gentle, persistent citrus-accented acidity, honeyed sweetness for roundness and balance, and a long, textured finish reminiscent of steeped black tea.
