This coffee is a Castillo variety from Finca Milan in the Huila region of Colombia, grown at an altitude of 1400 meters. It undergoes a unique experimental process involving yeast fermentation with fresh pineapple, lychee, and local aromatic plants, followed by a washed finish. The resulting cup is vibrant and layered, featuring distinct flavor notes of eucalyptus, lemongrass, and delicate florals.
