This coffee is from Edgar Erazo's El Filo farm in Santa Barbara, Honduras, grown at 1750 meters above sea level. The Pacas variety is processed using an anaerobic washed method, where handpicked cherries are sorted, floated, placed in an anaerobic environment, then thoroughly washed and dried on raised beds. The coffee features intense sweetness like dark honey, delicate stone fruit notes of apricot, and subtle acidity reminiscent of candied oranges. This light roast offers a clean flavor profile known for its approachability and crowd-pleasing characteristics.
