This coffee is a Red Bourbon variety from the La Rosita farm in Ecuador. Grown in cool Andean temperatures with humid, cloud-covered conditions, the cherries undergo a controlled washed process. This involves a 24-hour fermentation, followed by pulping and an additional 12-hour fermentation with the mucilage intact, before being fully washed and dried in covered polytunnels for approximately 10 days. The resulting cup is rich and rounded, characterized by remarkable natural sweetness and depth of flavor.
