Ecuador La Papaya is a single-origin coffee from Hacienda La Papaya in Saraguro, Loja, grown at 1900–2100 masl. The cultivar is Mejorado and the cherries undergo an extended 120-hour anaerobic fermentation in reclaimed oak barrels followed by 28–30 days of drying. Processed as a natural with anaerobic fermentation, the cup is rich and sticky with bright acidity and tasting notes of passion fruit, strawberry, and watermelon.
Drip Roasters is a Bern-based specialty coffee roastery run by brothers Dennys and Fabian. They'd been roasting for two years before opening their café on Eigerplatz in 2020. All their coffees are single origins. The lineup is balanced, from beans that are roasted a shade darker for broader appeal, to special lots that sit on the lighter end. The selection shifts depending on the season, and especially after origin visits, but is always fully traceable.
