This single-origin coffee comes from Piendamó, Cauca, Colombia, grown at 1900 meters on Finca El Paraiso. The Castillo variety is processed using a proprietary Thermal Shock Washed method that employs a custom "Red Plum" culture made with cascara extract, mucilage, and wine yeast. After fermentation and thermal shock, the beans undergo controlled drying at 35 degrees Celsius for 34 hours. The coffee features a balanced flavor profile with notes of strawberry candy, white grape, peach, and turbinado sugar, showcasing a light roast with a playful, funky character.
