This decaffeinated coffee originates from Huila, Colombia, grown at 1700-2200 meters above sea level. It is a field blend of three varieties: Colombia, Caturra, and Castillo. The coffee is washed and then decaffeinated using the Ethyl Acetate (EA) sugarcane process at Descafecol in Manizales, removing a minimum of 97% of caffeine. The coffee is fermented for 12-18 hours in concrete tanks and dried for 2-3 weeks on raised beds or cement patios. Tasting notes include caramel, raisin, dark cherry, and milk chocolate with a light to medium roast level.
