About This Coffee

Decaffeinated coffee from the Popayán region in Cauca department, Colombia, grown at altitudes between 1500-2070 meters. Produced by approximately 65 smallholder farmers working with Cofinet, who receive up to 20% premium above market price based on quality assessment. Features varieties Colombia, Castillo, and Caturra. Decaffeinated using the Sugarcane method, where caffeine is extracted using sugarcane ethyl acetate and water over 8 hours, maintaining the coffee's flavor characteristics. The coffee is washed processed and offers sweet and syrupy notes with flavors of orange juice, peach, yellow stone fruit sweetness, red apple acidity, and almond finish.
