This coffee is a single-origin Castillo variety from Finca Maracay, a family-owned farm in the Armenia region of Colombia, grown at 1550 meters altitude. It undergoes a unique 72-hour anaerobic fermentation process with wine yeast and the addition of lulo fruit, followed by drying on raised beds. The resulting cup offers a complex and elegant profile with distinct notes of lemon balm, lulo, and rhubarb, characterized by a fruity, slightly herbal, and flavorful experience.
