William's Roastery

About This Coffee

This coffee is a single-origin selection from the Capilla del Rosario farm in the Antioquia region of Colombia, grown at an altitude of 1650-2000 meters. Produced by Jose Posada, this blend of Caturra, Castillo, and Colombia varieties undergoes a unique 'Lokum Washed' process involving semi-anaerobic fermentation with added fruit and sugar cane-derived sugars, rose extracts, and microbial cultures. The resulting cup offers a complex profile with distinct notes of rose, mastic, strawberry, blueberry, and brown sugar, characterized by a vibrant acidity and a sangria-like aroma.
