This coffee is a Geisha varietal from Las Marias Estate in Pijao, Quindio, Colombia, a farm located at high elevation in the heart of the Andes Mountains and surrounded by native forest. The Geisha seeds were obtained from Panama and grown by the Giraldo family. The Salpicon lot was picked at peak ripeness (brix grade >22) and processed using a 96-hour anaerobic natural fermentation in sealed tanks with natural CO2, followed by a slow 40-day drying process at the Cafe 1959 Facilities at La Clarita Drying station.
