A single origin coffee from Colombia's Cundinamarca region, grown by farmer Fanny Velandia as part of the La Palma y El Tucan Neighbour and Crop Project at 1,580 masl. The Castillo variety is processed using Mixto, a combined lactic and acetic fermentation method involving airtight pre-fermentation, pulping, acetic tank fermentation, and drying on African-style raised beds. The result is a balanced cup with medium to heavy body, featuring notes of orange, hibiscus, caramel, blackberry, cranberry, and grapefruit.
