This coffee is a Castillo variety grown at 1386 meters in the Armenia region of Quindio, Colombia. It undergoes a unique Mango Osmotic Dehydration process, a form of co-fermentation where the coffee is immersed in a mixture of concentrated glucose juice and ripe mango. This innovative method, developed by Juan Puerta at Sens Coffee, results in a bright and complex flavor profile with notes of fruit roll-up, mango lollipop, and mango nectar. The beans are sun-dried for approximately 15 days to develop depth and rounded sweetness.
