This coffee originates from the Cauca region of Colombia, grown at 1,900 masl on Finca El Paraíso 92, a family-owned farm operated by Wilton Benitez. The variety is Striped Bourbon, processed using Koji Fermentation — a technique where Aspergillus koji fungus is introduced during the drying phase to preserve sugar content and intensify flavors. The result is a heavier body, refined acidity, and fruity, complex aromas. Tasting notes include lychee, candied orange, champagne, and grape.
