This Ombligón single varietal coffee is produced by Gerson Mora at Villa Pastora in Colombia. The coffee undergoes a complex processing method, starting with a 72-hour anaerobic fermentation, followed by inoculation with brewer's yeast and an additional 120 hours of fermentation before being depulped, soaked, and dried. This process intensifies tropical fruit notes, resulting in a flavor profile characterized by syrupy and tart passion fruit, funky papaya, and floral orange blossom notes.
The first coffee roaster in Cambridge, Broadsheet opened in 2017 , with owner Aaron McDougall, a finalist at the US Roasting Championship, shifting into coffee from a previous careerin banking. Aaron is an Arabica Q-Grader and sources exceptional coffees from around the world that range from comforting to experimental and eye-opening.
