This pink Bourbon varietal from Franco Huelgos' farm in Colombia undergoes a distinctive double fermentation process: 36 hours in the first phase for temperature stabilization, followed by 100 hours in closed tanks with water after depulping. The coffee is then washed and dried on raised beds. The processing brings out clean complexity with bright lemonade acidity and candy cherry sweetness.
Lineage Coffee Roasting was founded in January 2012 by Jarrett and Justine Johnson in Orlando, Florida. The couple started with a retrofitted grill and an ice cream motor powering a 3 kilogram roaster, and within months had upgraded and begun building a reputation for meticulous small lot roasting. By 2015 they were traveling to Guatemala and Colombia to establish direct trade relationships, later expanding those connections into Kenya and Ethiopia. Today Lineage operates three café locations across Orlando, cups and dials in every coffee served, and runs a wholesale program alongside a roasting academy. The hands on approach that began with a homemade setup continues to define the company's identity more than a decade later.
