This coffee is a 100% Castillo variety from Finca Santa Monica in Quindio, Colombia, grown at 1500 meters altitude. Produced by Jairo Arcila, the beans undergo a dry anaerobic fermentation for 72 hours with the addition of strawberry and wine yeast, followed by pulping and drying on raised beds with ripe strawberries. This experimental co-fermented process results in a balanced, fruit-forward, juicy, and sweet cup with flavor notes of strawberries, jam, sweet candy, floral, and sweet citrus.
