Bailies Coffee Roasters

About This Coffee

This coffee is grown in the mountains of Cauca, Colombia, by the indigenous Nasa community of Pueblo Nuevo. Cultivated on small, shaded farms at high altitudes between 2000 and 2100 meters, the coffee is processed using traditional washed methods. It features a rich body, vibrant acidity, and a balanced profile. Tasting notes include pomelo, white sugar, and chamomile, with a pistachio aroma. This lot is produced by Leonel Campo and his family, members of the Comepcafe Cooperative, and is grown under a canopy of plantain and Leucaena trees.

Bailies Coffee Roasters

Russell Bailie founded Bailies in Belfast over three decades ago, building it into a cornerstone of Northern Ireland's specialty coffee industry. The roastery uses Probat machines alongside a dedicated coffee lab where roast profiles are developed to reflect the character of each lot and honor the wishes of their farming partners. Sourcing runs on direct trade relationships built over 25 years, including a decade long partnership with the Andrade family in Brazil. Bailies also operates Northern Ireland's first fully SCA accredited training campus, the Bailies Academy, staffed by authorized SCA trainers offering courses from beginner through advanced levels. An in house engineering team with over 40 years of combined experience services equipment from La Marzocco, Kees van der Westen, Mahlkonig, and other major brands, making the company a full service operation for cafes, restaurants, and hotels across Ireland and the UK.
