Processed using double anaerobic fermentation with thermoshock method, featuring 95% ripe and 5% semi-ripe cherries treated with ozone water. Two 48-hour fermentations at controlled temperatures (18°C then 21°C) with added Leuconostoc bacteria for lactic production, followed by thermal shock washing. Exhibits intense floral and fruity characteristics with rose, bergamot, lychee, and peach notes, complemented by a long-lasting mouthfeel.
