About This Coffee

This coffee is from El Paraiso farm in Nariño, Colombia, produced by José Ignacio Gómez at altitudes between 1200-1900 meters. The Caturra variety undergoes an anaerobic natural process where cherries are handpicked at optimal ripeness, disinfected, and fermented in sealed tanks under anaerobic conditions for up to 10 days with careful monitoring of temperature, pH, Brix, and CO₂. Drying occurs in two stages: first on raised beds for three days, then mechanically at 45°C for 24-36 hours. The 2024-2025 harvest features flavor notes of blackberry, caramel, cherry, dark chocolate, orange, and passionfruit.
