This coffee is sourced from the Huila and Tolima regions of Colombia, grown at an altitude of 1700 meters. It consists of Castillo and Caturra varieties and is processed using the sugar cane (Ethyl Acetate) decaffeination method. The flavor profile features a sweet base of maple syrup and caramel, complemented by notes of sponge cake and nuts, with a subtle citrus finish. This coffee is roasted in an Omni style, making it suitable for both espresso and filter brewing methods.

Diamonds Roastery is a family operation run by Tomáš and Dáša from Dunajská Lužná, a town just outside Bratislava, that traces its origins to a Christmas gift in 2014: a plastic popcorn maker and one kilogram of green Kenyan coffee. That modest start led to a Huky 500g roaster in 2015, a four day roasting course with Cup of Excellence judge Paul Songer in Kyiv, and eventually a full specialty roastery that now tastes over 800 coffees a year to select roughly 50 exceptional lots. The company has expanded beyond coffee into bean to bar chocolate production, and its packaging is known for playful Slovak phrases contributed by both the team and their customers. Diamonds supplies a network of cafes across Slovakia and Czechia and sells direct through its online shop.
