About This Coffee

A washed coffee from Palestina, Huila, Colombia, produced by Durley Sánchez at 1650 meters altitude. This Pink Bourbon varietal is processed with overripe cherry selection, immediate depulping, and a 60-80 hour closed dry fermentation without mucilage, followed by 15 days of greenhouse drying on raised beds. The coffee exhibits bright green and yellow grassy fruit tones with notes of limoncello, pine needles, and jasmine. The body is delicate and tea-like, reminiscent of high-quality sencha green tea, with a perfumed jasmine finish.
