About This Coffee

This specialty whole bean coffee is sourced from the Anserma cooperative in the Caldas region of Colombia. It is a Castillo variety coffee that undergoes a unique natural process involving 96 hours of anaerobic fermentation followed by controlled drying in a Nuna drying box. The flavor profile is characterized by notes of candied orange, star anise, and cocoa, with a rich fruitiness reminiscent of orange wine. This coffee is roasted for espresso and is suitable for both lever and automatic machines, as well as home brewing methods.

RepublicThis Ostrava based family roastery was founded in 2017 by husband and wife duo Petr and Marie, who previously worked as baristas at Berlin's Five Elephant cafe. What started as a small family business with dad roasting and mom tasting while the kids watched has grown to a team of over 10 people with a Prague showroom opening in Bubenč. They roast on an American made five pound Diedrich IR-5 roaster with quality as their number one priority, offering regularly rotating harvests from around the world. Their Mothership espresso blend has become beloved by baristas and home enthusiasts for its full creamy body and milk chocolate flavor.
