The Bourbon Sidra variety undergoes a distinctive Black Honey Mossto Lactic process: cherries are hand-selected at peak ripeness (over 20° Brix), followed by 24 hours of controlled oxidation, 72-hour carbonic maceration with lactic bacteria inoculation, and Black Honey processing with retained mucilage. The cup presents floral aromatics, candy-like sweetness, juicy blueberry notes, bright wine-like tartaric acidity, velvety texture, creamy white chocolate undertone, and lingering orange blossom florals.
