This single origin coffee comes from Arnulfo Osorio's 7.5 hectare farm in Planada, Tolima, Colombia. The farm includes 1.5 hectares planted with approximately 4,500 pink bourbon trees. The coffee is grown in the El Triunfo, Tarqui, Huila region at 1850 meters elevation. Pink bourbon cherries undergo dry fermentation for 60 hours, are fully washed, then dried for 25 days in parabolic dryers. Genetic studies suggest pink bourbon has Ethiopian heirloom lineage rather than being a bourbon mutation. The area features high elevation, volcanic soils, and strong diurnal temperature swings. Flavor profile includes brown sugar, cooked apple, brown spice, and plum. This is an espresso roast.
