This coffee is sourced from the Huehuetenango region of Guatemala, grown and processed by women farmers from the CODECH cooperative. It is a washed process coffee consisting of a blend of Bourbon, Catimor, Caturra, Maragogype, and Pache varieties. The flavor profile is characterized by notes of milk chocolate and brown sugar, offering a smooth finish. The cooperative focuses on gender equity, organic agriculture, and community development.
Founded in 2014 by Matija Belković and Hannah Powlison Belković, Cogito emerged from their pioneering cafe "Cafe u Dvoristu" when Zagreb had only two establishments serving quality coffee. The addition of Matija Hrkac—three-time Croatian Barista Champion and 2012 World Barista Championship finalist—transformed this courtyard venture into Croatia's leading specialty roastery. Their approach respects Croatia's deeply social coffee culture, where leisurely consumption remains paramount, while introducing international quality standards to a market long dominated by commercial roasting.
