About This Coffee

This decaffeinated coffee is from the Chiapas region of Mexico, produced by Chabela at 1300 meters above sea level. The coffee is washed processed and features a blend of Bourbon, Catimor, Garnica, and Typica varieties. The flavor profile includes lemon, plum, cinnamon cookie, and brown sugar notes. The decaffeination process is water-based and achieves over 99% caffeine extraction, using technology patented in 1987 and certified organic in 2003.

Harmony Roasters

Harmony Roasters began in 2021 when Dani sold his motorbike to buy a one kilogram capacity roaster. Together with his partner Agatha, who handles photography, social media, and the web presence, Dani built a micro roastery in Montcada i Reixac on the outskirts of Barcelona. His approach favours minimal intervention, letting the coffee's natural character come through rather than imposing a heavy roast signature. It paid off quickly: Dani won both the Catalan Coffee Roasting Championship and the Spain Roasters Championship in 2021, then took the Catalan title again in 2022. The roastery uses fully compostable packaging and supplies several businesses around Barcelona.
