This washed Gesha from El Salto, Boquete, Panama is grown at 1,600 meters elevation by producer Jose Luis Chevas. The coffee was depulped and underwent a 48-hour dry oxidation phase before a three-day extended washing process and sun-drying on raised African beds. The variety offers a clean, elegant profile with floral, sweet, and structured characteristics, delicate acidity, and tasting notes of orange blossom, mangosteen, and sakura.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
