About This Coffee

This coffee comes from Copacabana, Bolivia, near Caranavi. Producer Carmela Aduviri manages a three-hectare farm at 1,400–1,550 meters above sea level. After harvest, cherries were processed at Agricafé’s Buena Vista wet mill and dried to 11.5% moisture, then hulled and sorted at Agricafé’s La Luna dry mill. The lot is composed of Caturra (a natural Bourbon mutation) with hazelnut, raisin, and pear notes, offering a sweet, balanced profile and a silky texture. It performs well as a Modern Espresso and is approachable for filter coffee.

Even Coffee

Even Coffee was opened in late 2024 in Montreal's Mile Ex neighbourhood by Andrew Werbowyj, who previously founded Not Even Coffee in Toronto in 2019 and spent time roasting with Fjord Coffee Roasters in Berlin. The roastery occupies a 1,170 square foot space on Rue St Zotique designed by Future Simple Studio, with all coffee roasted on site under the direction of head roaster Pauline Menard. Werbowyj's approach treats intention as central to every step, from sourcing single origin lots to developing roast profiles that range from light and floral to deeper, chocolatey expressions. The operation sells directly through its own location and ships across Canada, maintaining a small and focused range that reflects what is available seasonally. Even has quickly drawn attention in Montreal's competitive specialty scene, earning features in Canadian Interiors and NUVO for the way it integrates design, hospitality, and craft roasting into a single space.
