Costa Rican single origin from Alajuela region at 1100-1350 meters elevation, grown by Carlos Morera on his Finca El Cerro farm. Caturra variety processed using anaerobic fermentation with sealed-tank fermentation, mucilage selection, and controlled pH, temperature, and brix monitoring. Medium roast with cinnamon pastry, French toast, maple syrup, and apple jam notes.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
