A blend of Tabi and Yellow Colombia varieties, 100% Arabica. The coffee undergoes a two-stage fermentation — first aerobic, then anaerobic under water — followed by a thermal shock with hot and cold water to preserve the flavor profile. Tasting notes of mandarin, peach, and vanilla.
