Blaue Bohne

Blaue Bohne Rösterei is a specialty roastery in Berlin's Friedrichshain neighbourhood, founded in 2009 by Henrik Hülsmeier in a self managed house near the Boxhagener Kiez. Pablo Fuchs joined as a barista in 2012 while still a student and took over the business in 2019, building it into a team of ten people from across the globe who run the operation as a flat collective with no hierarchies. The roastery works on a 10 kilogram drum roaster, using green coffee from ecological cultivation and roasting in small batches with roast times of 13 to 19 minutes depending on the variety. Signature blends such as Bandido, Sumex and Berlin sit alongside seasonal single origins from farms including Hacienda Claudina in Colombia and producers in Ethiopia and Honduras. The motto translates roughly to real good coffee for real everyone, reflecting a deliberate openness that avoids specialty coffee dogma while still prioritising quality and traceability.
