Las Guas from Paltas, Loja, Ecuador is produced by Felix Capa Valdivieso and William Miguel Celi. This extended fermentation washed coffee features a blend of Typica (Criollo), Caturra, and Yellow Catucai varieties grown at 1,850 meters elevation. The cherries are rested 24 hours before depulping, then dry fermented for 30-36 hours, followed by washing and 10-12 days of greenhouse drying. Light roast with tropical candy, cherimoya, and green apple notes.
