This experimental coffee from producer Andrés Martínez in Cauca, Colombia, is a field blend processed using a unique honey-processed blackberry mosto co-fermentation method. Fresh blackberries are fermented anaerobically with yeast to create a mosto, which is then co-fermented with the coffee for four days before a light wash. This process results in a light roast with a vivid, structured flavor profile featuring notes of blackberry compote, hibiscus, sweet cream, and honey.
