This coffee is from Aquiares in Costa Rica. It uses a unique "Churro" natural processing method where cherries are wrapped in thick plastic, rolled into cylinders, and sealed to undergo fermentation in a greenhouse heated by the sun for at least three days. After fermentation, the cherries dry in the sun for approximately 15 days and rest for three months before milling. This is a light filter roast from a lot that has been selected for three consecutive years.
