APICUC Guatemala Specialty Coffee is a Bourbon-based washed coffee from Union Cantinil, Huehuetenango, Guatemala, grown by multiple smallholders at 1,300–2,000 meters above sea level. The beans are depulped, washed, and sun-dried, delivering a Huehuetenango profile with notes of caramel, apple, cherry, and baking spices. The lot is produced by 100 cooperative members under the APICUC cooperative.
Panther Coffee was founded in 2010 by Leticia and Joel Pollock, a husband and wife team bringing over 40 years of combined coffee industry experience to the Miami roastery. They began with a vintage 1927 Perfekt roaster, a piece of equipment acquired from Lighthouse Roasters in Seattle that carries the weight of coffee history into modern roasting practice. Direct trade sourcing focuses exclusively on organic beans from small farms in Nicaragua, Brazil, Guatemala, and Ethiopia, building relationships that honor farmer knowledge and fair compensation. Recognition through Good Food Awards and ranking among the World's 100 Best Coffee Shops affirms the roastery's commitment to quality and ethics.
