About This Coffee

This single-origin coffee is a Gesha variety from El Sendero farm in Popoyán, Cauca, Colombia, grown at 1,750 meters altitude. The coffee undergoes a yeast-inoculated semi-washed process where hand-harvested cherries are fermented for 48 hours with saccharomyces cerevisiae to encourage controlled oxidation and flavor stability. After depulping without water, the coffee ferments in mucilage for an additional 24 hours with frequent agitation. Drying is slow and staged to preserve aromatics while building structure.
