About This Coffee

This coffee is a Gesha variety from El Sendero farm in Popoyán, Colombia, grown at 1750 meters above sea level. Producer Andrés Martinez, a biochemical engineer, uses a yeast-inoculated semi-washed process. Hand-harvested cherries undergo 48-hour fermentation with saccharomyces cerevisiae yeast, followed by depulping without water, then an additional 24-hour mucilage fermentation with frequent agitation. The coffee is dried slowly and staged to preserve aromatics while building structure.
